Once seeds germinate, plants are transferred to a nursery where the plants will grow for 10 to 12 months. At each stage of puberty the plants will be monitored and properly maintained with proper nutrients, so the plant can achieve the optimal size of the root and a vegetative system, which will allow the plant at the right time to become resistant to conditions on the plantation. In this process, it is necessary to care for it a lot, giving the plant a suitable temperature, controlling shade, sunlight and thus eliminate the stress to which it is exposed coffee a through improper conditions for growth.

Obviously to produce the best coffee possible you want to pick the coffee while its red. Sounds easy enough right? If coffee all ripened at the same time it probably would be. Rarely though does that actually happen. Coffee tends to ripen in waves over a period of 2 or more months.

There are hundreds of chemical reactions that take places within the 10 or 15 minutes it takes to roast a batch of coffee, and controlling these can be quite difficult. Small changes in temperature, humidity, airflow, and time can make dramatic changes to the final cup, so roasters have to be very precise with their roasting routine and environment.

What the crack... Sound is a great indicator for the roasting temperature. There are two points within the roasting process where what you hear becomes very important. These audible moments are called “cracks”. The first crack of the coffee bean comes at about 385°F in the roasting process.
